When CAVA, the Mediterranean-inspired fast-casual restaurant wanted to establish themselves in New England, they enlisted our restaurant team to guide them through the process of opening two locations in Boston. Working on both locations simultaneously, our team led CAVA through the challenges of establishing restaurants in two distinct settings that would bring their brand and customizable menu experience to Bostonians—all within an accelerated project timeline.
Deep in the heart of Boston’s Back Bay, CAVA selected a location in a historic building near the Boston Marathon finish line on Boylston Street. Renovations within a historic building can be challenging, but our team’s experience with the Back Bay Historical Commission and permitting process served to streamline the restaurant’s buildout. As is often the case with older buildings, unforeseen conditions were discovered during construction after opening up the walls and ceilings of the two-story space. Our team presented CAVA with design solutions to work around the challenges in addition to keeping the project timeline on track.
At the other end of Boylston Street in Boston’s burgeoning Fenway neighborhood, CAVA’s second location was constructed in one of the new mixed-use developments with luxury apartments. In close vicinity to the iconic Fenway Park, Landsdowne Street, and a vibrant cultural and college scene, CAVA’s healthy, quick-serve restaurant experience serves an extensive clientele.
The demands of opening a quick-serve restaurant are great, and setting up two at the same time was a challenge our team embraced. Understanding not only the demands our clients face but also navigating the challenges of opening a restaurant in Boston helps to bring new restaurant projects to life quickly and efficiently. With the belief that creating good food is the ultimate connector – not just a necessity for survival – CAVA has set out on a delicious path to delectable new places, and we have enjoyed partnering with them on their New England journey.
